Flourless Tahini Muffins

These tasty fluffy muffins are a great way to start your morning in a hurry or pop into lunch boxes for a protein packed snack later in the day.

Tahini is a powerhouse of a nutrient, created by toasted sesame seeds.  You may not have tried it in a spread on its own, as its most common use is in hommus.  Tahini has a wide amount of minerals- such as, copper, selenium, phosphorus, iron, zinc and calcium. Minerals are essential building blocks for strong bones, and teeth, influencing muscle and nerve function, controlling fluids in and outside of cells, and being able to help turn food you eat into energy.  This recipe hold 768 mg of calcium just from the tahini alone. So if you are looking for a non dairy source of calcium, this is a winner.

Eggs are highly nutritious  and contain a range of essential nutrients. They are an excellent source of protein, providing all essential amino acids your body needs. They also contain vitamins A, D, E and vitamin B12, and minerals iron and selenium.  The highlight of eggs for me as a nutritionist, is the source of choline it provides for your brain and body. Choline is an essential nutrient that is essential for brain health- regulates memory, mood, and membrane health that surround your cells.  Other benefits that choline can provide is supporting a healthy heart, liver function, muscle movement, nervous system and metabolism.

Ingredients:
4 organic eggs
6 Tbsp organic hulled tahini
2 Tbsp honey
1 tsp aluminium free baking powder
Optional add ins: fresh raspberries, blueberries, or sugar free chocolate chips work beautifully

How To:  Preheat oven at 180 degrees. Combine with hand mixer ingredients- tahini, eggs, honey and baking soda until all combined and small bubbles form. Fold in fresh berries or chocolate chips.  Pour directly into silicone muffins holds or into 1 small silicone loaf pan. Bake for 15-20 min. Have a feel at the top for slight firmness and they will be ready.  Cool and serve with some organic butter, favourite spread, or as my kids like….as is!

Enjoy straight away or pop into an airtight container for up to 3 days in the fridge.
